Easy Greek Chicken Stew Slow Cooker #Recipe

A delish and easy Greek inpired slow cooker recipe for the Dutch oven. For a crockpot version of the recipe below, brown chicken and deglaze in a skillet before adding all ingredients to a crockpot and cook on low.

  • 2 chicken breasts
  • 2T avocado oil
  • ¼ cup bourbon
  • 2T Greek seasoning
  • salt
  • 1 can diced tomatoes
  • 1 can chickpeas
  • 1 can black beans
  • 6 cloves garlic
  • 3T dried onion
  • 1-2 cups chicken stock
  • ¼ cup kalamata olives
  • ¼ cup crumbled feta
  • sour cream
  1. Preheat oven to 225
  2. Cut chicken into ½-inch sized cubes
  3. Season with salt and 1T Greek seasoning
  4. Heat oil in Dutch oven until rippling hot
  5. Brown chicken (in batches if using a small pot) and deglaze with bourbon
  6. Scrape up brown bits and remove from heat
  7. Add chickpeas and black beans to a colander and rinse
  8. Run garlic through a press and add to the pot along with tomatoes, beans, peas, dried onion and remaining seasoning
  9. Pour in chicken stock to desired consistency
  10. Cover and place in oven to cook for 4+ hours
  11. Plate in shallow bowls and top with kalamata olives, feta and a dollop of sour cream if desired
