2011 USPSA Single Stack Nationals Re-Cap

After weeks of travel and dodging flooding at home, I am finally getting a chance to get caught up on my match mania re-caps. First up, the USPSA Single Stack Nationals (SSN)! This is one of my favorite matches. You might think all USPSA matches have a similar feel, but the stages at the Single Stack are different from the sport’s other national championships. Field to Fork – Kimchi Meatloaf

Kimchi Venison Meatloaf with Asparagus and Brown Rice

I admit it. I am not a fan of meatloaf but my husband loves it.  I am constantly looking for ways to infuse some different flavors into the American classic.  I put together this super easy recipe for meatloaf with a little kimchi kick! Love to hear what you think!

Kimchi Venison Meatloaf

  • 2 shallots
  • 4 cloves garlic
  • 1-1/2 c. kimchi (hot)
  • 1 egg
  • 3/4 c. breadcrumbs
  • 1 lb. ground venison

Preheat oven to 350 degrees.
Chop shallots & garlic and kimchi.
Beat the egg.
Mix the egg, shallots, garlic and kimchi thoroughly.

Is it really June???

To say I have been busy is an understatement and my travel schedule for the past 30 days reminds me of the days I shot for the US Army Marksmanship Unit (INTENSE).
